I recently assigned an app to a file type (textedit to markdown) and I noticed the file “kind” has changed to md with some additional characters, possible Chinese. Is there a way to reset this to just md or markdown?

Finder is showing the same. I think it was possible TeXworks that may have changed the file association.
Yeah, DEVONthink gets the information from the Finder.
