Am I correct in assuming that I should store my DT databases on the most used machine, even if that is a laptop?
Changing career and new job requires extensive travel, and when traveling won’t always have access to internet or good internet.
Would it be best to have the office iMac running with sync instead of hosting the databases?

Which edition of DEVONthink do you use? In case of the Standard/Pro editions synchronizing the databases should be sufficient.
Devonthink Pro edition.
A synchronization via a cloud service when you’re online or via Bonjour when your computers are in the same network should be fine.

Only Bonjour isn’t possible in case of different networks.
