Yes, I’m currently using tags, but for this particular scenario, labels would be awesome as I could see them.

No, this is not possible.
In Preferences > General > Appearance, if you’re using Modern or Dots as the Label appearance, you can color tags in the Info inspector’s color well, with no limit.
Although it’s not quite the same as using label colors, have you tried changing the colors of the tags? Using the combination of (1) colored tags and (2) changing the columns displayed in a list, it can help distinguish things pretty well (to me anyway). Here’s an example of how I use colored tags for literature:
