I would like to be able to customize the font face and other style elements in Formatted Notes (see image capture), as well as Markdown, HTML, etc. In the DT3 Preferences, I can set some of the styles for plain text, is there a way to control the style more precisely for the various other formats?

Currently, no the styling can’t be changed for Formatted Notes.
There is a Style Sheet option for HTML in Preferences > Web.
There is a Style Sheet option for Markdown in Preferences > Media.
Other default formatting options are in Preferences > Editing
Also, these items are noted in Help > Documentation > Preferences and some file type-specific info in the Documents chaper.
