Is there such thing as a master or main databases?
if some one has two or more Macs how does someone know which Mac has the “master” “main” databases? or there is no such thing?
Speaking of databases is it necessary to have an encryption key for the databases? why and why not?

When syncing multiple devices, there is no master database except in the mind of an individual. For example, you may work on a Mac Studio most of the time and treat it as the master copy. But technically speaking, every other device’s copy of the database is at the same status.
Speaking of databases is it necessary to have an encryption key for the databases? why and why not?
As noted in the encryption key field, it’s Recommended though optional. If you have concerns about someone “getting your data”, it’s a way to alleviate that concern but obscuring the content of the sync data.
