Nothing turns it into Pro. This is a beta test and is the Server functionality for testing, finding / reporting bugs. After the beta period is over, we will release the public version and the functions will only be for the edition you have licensed, e.g. the Web Sharing will no longer work if you haven’t licensed the Server edition.

I suggest using a separate user account and isolated copies or test data.

Could you elaborate on the separate user account?

In System Preferences > Users & Groups you can create a new User account and use this for testing purposes. Some people choose not to. It’s just something I suggest to keep things isolated.
