Can i export my devonthink database to excel or .csv ? I mean the data concerning my filename, kind and custom data etc that i’ve buil form my legal profession

Yes, you can export to CSV (or TSV) using s script. I don’t know if that’s readily available, though.
Tools > Create MetaData Overview creates a .tsv file
