I am using DT pro and I don’t want to use Sorter. I unchecked ‘availability’ and ‘visibility’ at the preference panel, but every time I start the system it is there so I have to quit each time manually. What do I do?

Remove it from the login items in your System preferences.
And to keep Sorter permanently disabled make sure DEVONthink Sorter Helper is unchecked whenever the Install Add-Ons dialog is used (e.g. after updates).
