Do you have any advise for me to ensure success during a large Evernote or Mail import? I have started a new database in dropbox called Archive for this kind of thing which will hopefully regulate any future problems with large databases to that one.
Yes. Do it in smaller batches.
Import sub-mailboxes instead of a top level mailbox.
Import individual notebooks instead of all of them.

My database still shows tags from the old database, even though it is no longer used and has been closed. Spotlight also gets search results from the old database that aren’t linked anywhere.
Is there a way to reset the tags and Spotlight index so that they only reflect the actual documents in the open databases?
Where do you see these obsolete tags? You can search for obsolete tags e.g. via a toolbar search for kind:ordinarytag item:!data
