Currently I have the button ‘open document with textedit’. Is it possible to change the default to another text editor? I have Byword installed that I would prefer to use.

That is not under our control. You can choose Data > Open With, also from the contextual menu, or you can change the system default application in the Finder.
To change the default application, select a text file in the Finder and press Command-I to open the Info pane. Choose the application in the Open With section, then press the Change All button.
