Would it improve searches if I re-OCR’ed the PDF’s after importing to Devonthink Pro.
I noticed if I re-OCR the number of unique words changes - sometimes increasing and sometimes decreasing.

The general answer is no. Repeated OCR of a searchable PDF usually results in increasing text conversion errors.
