Yes, sorry about that. I tried to explain that I was looking for the two digit sorting, the underscore and the instrument name. I didn’t stress enough that it was important to me, that the two digits remain.

Still not clear. Do you want
- a folder named “VIOLIN I” that contains all files with “VIOLIN I” in their name, thus “-Intro_v1.2.3 - 01_VIOLIN I”, “-Jagt_v1.1.1 - 01 VIOLIN_I”, and “-Puster Lys Ud_v1.1.2 - 01_VIOLIN I”?
- or a folder “01_VIOLIN I” containing all files with “01_VIOLIN I” in their name?

A simple before and after list would help to understand the requirements better. Your original post said, “based on instruments”. That would imply the first variant. Your last post said, “the two digits remain”, but it doesn’t say if you want these digits to be used to name the folder or just to stay in the filename.
Aside: What is even the role of DT in all that? If you just want to move files around outside of it (ie in Finder), why not use one of the many file renaming tools available for that?
