I wish to store .org files in DT.
ORG files are text files with the suffix .org
My question is how to configure/instruct DT that such files are text files and should be processed/viewed as such?

That’s not possible right now. DEVONthink accepts known file extensions, known HFS file types and files declared by third-party applications (e.g. Taskpaper) as plain text. Which application do you use to create/edit these files?
Emacs is the file creator.
I guess the pragmatic solution is just to manually change the mac os file type.
