I’m missing something.

But what is the advantage of this sub menu over the already existing Insert->Item Link sub menu?

Basically that you can easily link selected text to a document and that the linked text is not necessarily identical to the title of the linked document.

However,
I still prefer Insert->Item Link because it lets you search and Link to does not.

The contextual menu items Link To and Insert Link To work the same, only Edit > Insert > Link To… supports searching.
