I often use dates that sort properly, in the format yymmdd (or, less often yyyymmdd, and were this format included in the Insert menu of WordService, I would use it every day. (I use WordService every day anyway).

WordService uses the system-wide settings for short & long dates, therefore you could do this by changing the system preferences (see System Preferences > International).
