Just a heads-up - from a happy user.
I have tons of pdfs and pngs with stuff (mostly photography, but also general) bought from amazon and eBay along the years.
I decided to take a big pdf, and ask Chat “Please list all items and categorize them (e.g., Photography, Food) and create an rtf file with the results sorted by category”.
And boom, there it was. Nearly perfect.

Did it just produce paragraphs or lists or …?

It produced sections with bold category titles (e.g., Household Items), with simple lens under them - not a structured list (I didn’t actually ask for it - but I suppose if I have asked “as a bulleted list” it would).
This, modest and humble - will make my life much easier - as i have tons of pdf files with this kind of stuff, and other things such as documents. Super happy! I can go scavange some stuff I dreaded getting into.
Ah wait, it did produce a list - markdownish (and no bolded category sections)
