I don’t see an option like that; I’m pretty sure it’s not possible. (Well, maybe with a custom toolbar script, but I don’t see the point.)

Isn’t the Editing Bar enough?

You can also assign keyboard shortcuts to the different colors.

If you use a trackpad, it’s also possible to do some magic with Better Touch Tool, like here:

Highlighting problems

If you, like me, don’t want to use keyboard shortcuts for highlighting, you could also use Better Touch Tool to enable highlighting with Magic Trackpad gestures, like a 4 finger tap, to make this much faster than using the contextual menu (which would drive me nuts because it’s so slow).
