Is it possible to convert a scanned Color PDF to Grayscale, in the hopes that it will save space? I don’t see any options for doing anything like that, but perhaps I’m overlooking something.

DEVONthink doesn’t support this but an Automator workflow using Quartz filters should be able to do this.
