Copying database vs syncing

I’m not having much luck with syncing my databases via Dropbox. They’re simply too big and it takes forever (weeks) over my connection.

Can I simply copy the databases I have in my Documents/DevonThink folder to a USB stick or flash drive, and overwrite the same files on my laptop, then reverse when I switch again?

I only need them on my laptop for when I travel.

Yes, you can do this. However, instead of that I suggest setting up a local syncStore on the flash drive and Syncing to it. This will be the Sync Location for both machines and will be very fast - much faster than a copy and replace method.
