Dash, en dash, em dash in plain text and markdown

Is it not possible to differentiate between these 3 dashes in plain text or markdown
The dash is simply the dash key
option-dash is the slightly longer en dash
option-shift-dash is the longest dash.

I can only get these in RTF but trying to migrate to MD or if not, at least a plain text file.

Your last sentence does not make a lot of sense.

Regardless, I have no problem typing the different dashes directly into MD documents.

sorry, what I meant is that while I can see these differences clearly in an RTF file, when I convert them to plain text or markdown, they all become the same size. Or when I try to type them directly (vs. converting), also the same.

Which font is used for plain texts (see Preferences > Editing)?

Looks like a mono-spaced font. Which of course would explain that all characters have the same widths.
