Iā€™m having difficulty finding any documentation about what any of this broader syntax is included in DTTG. The blog post and the in-app help donā€™t seem to link to anywhere helpful. I tried a callout using the [!note] format that I found on a GitHub guide but it didnā€™t render as anything.
Iā€™ve rebooted my phone and double checked that itā€™s fully update OS and apps.

No, there isnā€™t a formal guide for all possible new options. Many people use a Markdown flavor for specific features, like callouts. They would just use a feature from that flavor to see if it works in DEVONthink Markdown. Note, thereā€™s no promise of all options being supported.

In the case of callouts, a blog post is scheduled but, e.g., >[!info].
