I am thinking of buying a DEVONthink Pro license, but I can’t figure this out. I am not that familiar with email tech terminologies, so I apologize for my ignorance.
I use the Hey dot com email service. Will I be able to send documents or notes to DEVONthink from there? Or is Apple Mail, and Outlook the only apps supported?

If that is a web only service, I doubt that you’ll have luck with that. Their website is of course blissfully void of facts, but overloaded with marketing blurb.
Long story short: If you can connect your account there with Apples’s Mail program, DT should be fine with it. If not – I’d not consider using something that can’t be connected to a desktop mail client. YMMV.

Hey has their own email app (as well as web). So, I would have to “port” (that is probably the wrong term), all my emails to Mac’s native mail app, and use it that way? That won’t work for me, as the selling point of the Hey service is the way it organizes and archives emails.

I am a hey user and the options for getting mail out are fairly limited. On an individual mail you can select the ellipsis in the upper right and either print or download the original:
This option is not available if you select multiple emails which is extremely limiting.
There is an option to generate an mbox file for your account under your account profile - this does include all mail - including mail you have screened out.
