How to remove Default Open with in macOS?

Directly related to DEVONthink but controlled by macOS. I know how to add a default app to “open with” via macOS Finder, and it’s clear how to change it. See screen shot (for those unfamiliar).

But I would like to remove the default “open with” app to nothing so that when I double click a document in DEVONthink, then DEVONthink opens with its built-in viewer and/or editor. I realise I can use the “Open” command in DEVONthink, but muscle memory goes for double-click often.

I’ve done a lot of internet searches on this topic and find lots of advice how to add and change, but little working advice how to remove back to “nothing”.

I’m hoping someone here might have run across the solution to this. It may be that Apple didn’t think of this, or something.

That’s actually the default behavior as long as the option Double-click opens documents externally isn’t enabled.

Ah. Yes. Knew there was a way.

Lesson: when one assumes the solution and then goes looking for it, a better solution probably is lurking and might remain unfound.
