I notice the option to select my own fonts for the interface has been removed from the Preferences -> General tab. Has the option gone entirely? Or moved to somewhere I can’t find? If it has been removed, can it come back in a later version?

The option has been removed, only the font size can be changed (and it’s unlikely that the former option will return as different font metrics make designing a user interface much more difficult).

Yes, very uncommon to have an option to change application fonts, makes indeed UI design very painful.
