I have a sheet with one of the columns set to single-line text. Is there a way to select multiple items in this field? Is there another data type or custom type that would do this?

Contiguous rows can be selected.
Is there a way to assign multiple values to a single cell. For example, if the single-line text field has options for apples and oranges, to be able to select both apples and oranges for the cell in that row.
Not without hardcoding every permutation.
Could it support that in the future? Or another column type specifically intended for multi-value storage?
I’m trying to migrate all my data from the Collections app to sheets in DT (https://collectionsdb.com). Sadly, DT doesn’t support pictures in sheets, but I can work around that with item links. It’s the columns where a single row could have multiple values where I am currently stuck. I suppose I could hard code every possible combination like you suggested, but it would be nicer if the app supported this natively.
Development would have to assess the feasibility and broad appeal of the request.
