Is there a shortcut to make the current group unsorted?
I keep accidentally clicking the top, which alphabetizes and gets rid of my manual sort. Is there a “back” button or way to get back to the manual sorting order I previously had?

If you select unsorted, the view will revert back to your manual sort order.
View > Sort > Unsorted from the main menu should do it.
Which can made faster in System Preferences > Keyboard > Application Shortcuts … make a shortcut for DEVONthink’s “Unsorted” menu title
