Sorting email group by typical email fields such as From, To, Body etc

I see that I can sort by thread to create groups of emails around each conversation. However I don’t see options to sort by email specific column fields such as “From:”, “To:” and so on. Have I missed something or is this not possible ?

Have you added those columns to the headers of the item list by control-clicking and selecting them?

If I control-click the area above the columns I get the following (no specific email related column headers)

Select Customize Metadata here or in View > Columns. Add and remove items to customize what columns can be displayed.

This is mentioned in the built-in Help > Documentation > Windows > Main Window > Item List : Sort.
