You could add a shortcut to Tools > Split Document via system preferences.

Further to @cgruenberg, as I was curious about this feature of MacOS, I setup a shortcut per Create keyboard shortcuts for apps on Mac – Apple Support (UK) found via Google as per screen shot. Spitting documents not something to do very often, but learning again how to do my own short-cuts for app menu commands was learning (perhaps re-learning) of the week.
So many things we can do for ourselves to meet individual needs!
